My Trip to Cali Offered A Solution to Healthy Living

Have you ever been at your wits’ end about a health issue like high blood pressure, diabetes, lupus, or some type of autoimmune disease? That’s exactly where I was. I was diagnosed in 1995 and here it was 2015 and I was still struggling with making the right food choices and my symptoms were slowly creeping back into my life. I had come along ways, I was told by my homeopathic doctor that by researching and education myself on nutrition and implementing changes I had plateaued my disease process and kept it from progressing.

I thought, if I learn to prepare healthy foods that would expand my knowledge of food choices, that would help immensely. That is when I looked into attending a culinary school. After much research I cam across a culinary school in California that taught how to prepare raw plant-based meals. I packed my bags and brought my daughter along with me. I wanted her to experience and learn that good nutrition has a lot to do with good health.

The students that attended this school were actually not there for the same reasons I was. They lived a life of exercising and eating healthy 24/7, I could tell by the energy they had and they were the perfect picture of health. It was an awesome experience and the students were from all over the world. They were from Iceland, Switzerland, Chili, Bahamas, Canada, and several from the US. For six weeks I ate healthy and did a lot of walking on the trails up along the beach. I felt great and the redness and breakout that I had on my face from autoimmune flareups cleared up.

I want to let you know that you are not alone if you have struggles. Don’t do this journey alone. Change is always hard but if you really want to do it you can. I’ve seen people bring their blood pressure down by changing what they eat. I fit that category. I’ve seen people bring their lupus into remission.

What are some of your struggles that you have when it comes to trying to implement healthier food choices? Is it the flavor of vegetables? Decreasing sugar intake? There are always alternatives to your favorite meal or desert. I would love to hear from you.

If you are on medication don’t get off of them. As you make your changes a good doctor will monitor your labs and as you get better they will make adjustments accordingly.

You don’t have to go to culinary school to change your eating habits. It is much simpler than you would think.
